Face it, it looks like the remains of turkey day will be on the menu for a while. Might as well make the best of it.

 

What to do with extra turkey

Use shredded turkey on salads, sandwiches, quesadillas and wraps. Turkey can even be used as a pizza topping with a barbecue sauce.

 

What to do with extra cranberries

Make these awesome cranberry oatmeal cookies.

 

What to do with a leftover veggie tray

Cut up the veggies and embellish a chef salad.

Dip celery sticks in peanut butter for a quick snack.

Steam broccoli and cauliflower. Top with a cheese sauce.

 

What to do with extra mashed potatoes

Make potato patties.

Ingredients:

2 cups mashed potatoes

1 egg, beaten

1 onion, minced

1/4 tsp. salt

1/8 tsp. white pepper

2—3 tablespoons olive oil

 

Mix mashed potatoes, egg and onion. Add salt and pepper.

Over medium heat, heat olive oil in a medium nonstick frying pan.

Drop about 1/4 cup of the potato mixture into the frying pan.

Pat it into a 4 inch circle about 1/2 inch thick.

Cook until bottom is brown and crisp (about 4 minutes)

Carefully flip the patty and cook that side until brown and crisp.

Repeat until all batter is used.

Serve with ketchup or salsa.

 

Safety Tips

Remember the 2-2-4 rule:

Do not leave food out any longer than 2 hours.

Refrigerate food in shallow containers, about 2 inches tall.

Eat leftovers within 4 days.
